 ½ Large cucumber, unpeeled
 150 g Greek yoghurt
 1 Large garlic clove, minced
 1 tsp Extra virgin olive oil
 1 tsp White vinegar
 ½ tsp Salt
 Pepper, to taste
 1 tsp Fresh dill, minced

Grate the cucumber, add the salt and then drain the water through a sieve for 15 minutes.

In a bowl, combine the yoghurt, garlic, oil, dill, and vinegar.

Add the grated cucumber and stir to combine.

Refridgerate until time to serve.
